The best bread for any season — naturally vegan

Focaccia is amazing for its irresistible combination of light, airy texture and rich, olive oil-infused flavor. Topped with herbs, sea salt, or other delightful ingredients, this Italian bread delights the senses with its simplicity and versatility. Whether enjoyed on its own, as a sandwich, or dipped in olive oil, focaccia’s deliciousness lies in its ability to be both a comforting staple and a gourmet treat.

Ingredients

  • ⅔ cup warm water
  • 1 tablespoon active dry yeast
  • 1 tablespoon agave nectar
  • ½ cup bread flour or all-purpose flour

Whisk to combine. Cover, and let rest in a warm place for 20 minutes. You will see lots of bubbles, indicating the yeast is activated!

Next, add 

  • 1-¾ cups of water
  • 5 tablespoons of olive oil
  • 2 cups bread flour
  • 3 cups all-purpose flour
  • 1 tablespoon salt

Mix!

Stir to combine, then turn it out onto a lightly floured surface and knead it until it’s a nice, smooth ball. (You can also knead it in a stand mixer.)

Place in an oiled bowl, cover, and set aside for 1 to 2 hours. 

Prove!

After 2 hours, uncover it, punch it down, and transfer it to a well-oiled sheet pan. You may also add parchment to the bottom of the oiled sheet pan, and oil the parchment paper, as well. Cover again, and let rest for 10 to 20 minutes. 

Uncover, and use your hands and fingers to spread the dough evenly across the sheet pan, filling it completely from side to side and top to bottom. It will be nice and pliable at this point.

Cover and let proof for 1 to 2 hours at room temperature. Or refrigerate overnight (and let warm to room temperature for 30 minutes or so before continuing.)

Then, use your fingers to make impressions throughout the entire gorgeous soft dough. Drizzle with a generous amount of olive oil, and press in more impressions to let that olive oil rest in those beautiful finger marks. 

Begin to decorate with red onions, olives, red pepper, basil, or whatever you like.

Bake!

When finished and ready to bake, sprinkle salt flakes across the top. 

Bake in a preheated 400-degree oven for 15 minutes. Turn and bake for another 7 to 10 minutes. 

Let cool for 10 minutes. Drizzle on more olive oil before serving.
